Omelette easy quick dinner


2-3 eggs
2 small mushrooms
1 tomato
½ avocado
½ spiralised zucchini
1 Tablespoon sauerkraut
Optional 1 Rasher Nitrate free bacon

Method :

Use 2-3 eggs per person

  • Combine all eggs in a bowl and whisk
  • Chop all other ingredients and set aside
  • If adding bacon chop and cook in frypan, add the zucchini at the end to the bacon (the residual heat will cook it enough)
  • Reoil the pan if required
  • Add the egg to the pan, let it spread across the whole pan and cook
  • When nearly cooked through add all other ingredients to one half of the egg
  • Flip the empty side of the egg over the top and let it cook for 30 seconds, flip the whole omelette over and cook another 30 seconds.
  • Once fully cooked slide onto a plate.

Easy Omelette is great for brekky, lunch or dinner. You can add any other veggies you have on hand
