Ingredients
2-3 eggs
2 small mushrooms
1 tomato
½ avocado
½ spiralised zucchini
1 Tablespoon sauerkraut
Optional 1 Rasher Nitrate free bacon
Method :
Combine all eggs in a bowl and whisk
Chop all other ingredients and set aside
If adding bacon chop and cook in frypan, add the zucchini at the end to the bacon (the residual heat will cook it enough)
Reoil the pan if required
Add the egg to the pan, let it spread across the whole pan and cook
When nearly cooked through add all other ingredients to one half of the egg
Flip the empty side of the egg over the top and let it cook for 30 seconds, flip the whole omelette over and cook another 30 seconds.
Once fully cooked slide onto a plate.
Easy Omelette is great for brekky, lunch or dinner. You can add any other veggies you have on hand
