healthy, easy, yummy taco bowl

Ingredients

500g grass fed mince
1 sweet potato
1 tomato
1 cucumber
1 avocado
Spinach or lettuce
Cheese
Sour cream
Taco spice mix – see recipe

Method :

Quick and easy to eat version of tacos

  • Peel and dice sweet potato into 1cm cubes. Cook in an air fryer or oven 200 degrees for 20 mins until cooked. Set aside
  • Cook mince in a pan, adding the spice mix when nearly cooked, add a small amount of water if required. Set aside
  • Dice tomato, cucumber, tomato and avocado

  • Add the mince to the bowl, then layer sweet potato, tomato, cucumber, avocado
  • Top with sour cream and sprinkle with cheese
  • Serve with organic corn chips

You can add any veggies or salad you have to this bowl
