easy veggie dinner

Ingredients

1 sweet potato
1 small head broccoli
1 zucchini
1 carrot
6 brussel sprouts
½ pumpkin
½ cauliflower
1 beetroot
(or any other veggies you love or have in the fridge)
½ cup coconut oil/olive oil
1 tsp paprika
1 tsp oregano
1 tsp onion powder
1 tsp garlic powder

Method :

You can serve with protein or just enjoy a beautiful bowl of veggies.

  • Turn oven to 180c

  • Peel and chop all veggies to approx. 2cm cubes (halve brussel sprouts)

  • Combine spices in a small bowl

  • Add veggies to large baking dish, pour over oil and mix

  • Sprinkle spices over and mix again

  • Bake for approx. 40 minutes, turning halfway through

  • Once cooked remove and serve

Leftover veggies are great to add to some protein during the week. So cooking a large batch is a great idea!
